Mini Pepperoni SIcilian Pizza
Wanna show your friends a pizza-party trick? Just bust out the mini peps! They’re fun, great with kids, and not many have seen these elusive little guys before!
Ingredients
Forza Pizza’s Simple Sicilian Pizza Dough
1/2 lb Sliced whole milk mozzarella
20 oz Sauce (recipe here)
5 oz mini pepperoni (pictured at the bottom)
A sprinkling of oregano
A sprinkling of parmigiano or pecorino Romano
Steps
1. Prepare and stretch dough as described in the Simple Sicilian Dough Recipe.
2. Lay down the mozzarella like below.
3. Prepare the sauce as described in this recipe and spread it around like below.
4. Scatter the mini peps evenly across the pizza as liberally or conservatively as you like. I just shake em out of my hand - they land where they land - as placing these little guys would take all day.
5. For me, all pepperoni pizzas get some oregano. Sprinkle it over the top.
6. Do the same with the parmigiano or pecorino and it is ready to bake.
7. If you’re used to finishing all your pizzas with a drizzle of EVOO, here’s a rule of thumb: don’t do it. Not on a pepperoni pizza. Pepperoni is oily in itself (sometimes greasy), so there is no need to add more. No one likes an oily, greasy, messy pizza.
8. Bake or convect bake at 500F. My pizzas are baked in an electric home oven on convect at 500F.
9. A pepperoni pizza is also a nice base for post-oven finishes. Some ideas include ricotta, basil leaves, hot honey, or anything else you like!
