Upside Down SIcilian
A classic pizza with really only two toppings - cheese and sauce. In the upside-down version, the cheese is placed on bottom and the sauce spread on top. Not only does this make for a juicy slice, but the sauce protects the cheese and allows you to get the bake you want without the risk of burnt cheese. Enjoy!
Ingredients
Forza Pizza’s Simple Sicilian Pizza Dough
1/2 lb Sliced whole milk mozzarella
20 oz Sauce (recipe here)
2 Handfuls of parmigiano or pecorino Romano for sprinkling
Drizzle of extra virgin olive oil
Steps
1. Prepare and stretch dough as described in the Simple Sicilian Dough Recipe.
2. Lay down the mozzarella like below.
3. Prepare the sauce as described in this recipe and spread it around like below.
4. Sprinkle the parm or pecorino over the top
5. Give it a drizzle of extra virgin olive oil.
8. Bake or convect bake at 500F. My pizzas are baked in an electric home oven on convect at 500F and take about 15-17 minutes.
